Kashmiri Rogan Josh

I’m a great fan of TLC Channel I love Indian food made easy. Yesterday when I’m watching one of its episode, I come across this recipe. Instant I took notes of it for my reference. I thought to post it for sake of other viewers. I will upload picture after I try this till that here is the recipe……….

Kashmiri Rogan Josh
Ingredients

Mutton or lamb
½ kg
Onion
2 large size
Tomato
2 medium size
Green cardamom
2
Black cardamom

Pepper corn
1 tsp
Cinnamon
1 inch
Star anise
1
Ginger
1 piece
Garlic
6-8 pods
Cumin powder
1 tsp
Fennel powder
1 tsp
Coriander powder
1 tsp
Cream or yogurt
1 cup
Salt
As required
Water
As Required
Oil
As required
Coriander
For garnishing

Preparations
  • Cut lamb into pieces with bone
  • Clean it with water and turmeric powder(my tip for cleaning lamb it take raw smell from mutton)
  • Cut onion into thin slice.
  • Make ginger garlic paste.
  • Make tomato puree.

Methods
  • Heat oil in a pan.
  • Add black green cardamom, cinnamon, star anise sauté it.
  • Add Chopped onion, gg paste to it sauté till onion becomes translucent.
  • Add mutton with some salt sauté for few minutes and close and cook for 10 MINUTES
  • Add tomato puree, cumin, coriander, fennel powder to it with some water.
  • Add cream at the end.
  • Garnish it with coriander.

Notes

  • We can add lime juice at the end also

Tamil Nadu Style Curry Masala Powder


Ingredients
Black Peppercorns - 1 tsp
Ground Coriander - 1/3 cup
Ground Turmeric - 2 tbsp
Cumin Seeds - 2 tbsp
Black Mustard Seeds - 2 tbsp
Fenugreek Seeds - ½ tbsp
Split Urad dal or Yellow Split Peas - ½ tbsp
Dry chilli pods - 6
Methods

Toast the cumin, black mustard, and fenugreek seeds, the split dal, and the fresh curry leaves.
Add the peppercorns and chili pods and grind the mixture to a fine powder.
Add the coriander and turmeric and mix well.
Store in an air tight container.

Tandoori Masala

Ingredients
Cumin Seeds - 10 grams
Coriander Seeds - 3.5 grams
Cloves - 2 grams
Ginger powder -2 grams
Garlic powder - 2 grams
Orange food coloring - a pinch
Red chilli powder - 2 grams
Turmeric powder - 2 grams
Methods

Dry roast the cumin, coriander seeds, cloves in a pan on a low flame, till they begin to release their aroma.
Allow it to cool.
Grind all ingredients together with it.
Store it in air tight container.

Honey and Banana Milkshake

INGREDIENTS

3 bananas
30 ml/ 2 tbsp clear honey
15 ml/ 1 tbsp lemon juice
300 ml/ 1 ¼ cups soya or rice milk
3 scoops vanilla ice cream
chocolate chips 3 tbsp
diced strawberry 6 pieces
mint sprig 1 no
METHOD
Break the bananas into pieces and put in a blender or food processor with the honey and lemon juice, soya milk and two scoops of vanilla ice cream, then blend until smooth.
Put diced strawberry and chocolate chips in the bottom of the glass then pour the milk shake. Fill half way and again add strawberry dices and chocolate chips then fill the glass completely and finally top again with strawberry and chocolate chips
At the end top with a scoop of vanilla ice cream  and a mint sprig
