Kaju Katli - Diwali Sweets

Kaju katli is many of our all time favourite sweet. I always order it in first place when it comes to sweet. One day I have interested in doing this recipe and browse for this sweet in net and bookmarked it. I have some. Cashews in my kitchen so thought of doing it and did it. It came perfectly well in taste. So here I posted my recipe .
Kaju katli
Ingredients

Cashew
1 cup
Sugar
½ Cup
Water
¼ cup
Milk
1 tbsp
Ghee or butter
For greasing

Methods
à Grind the cashew well into powder.(It will look like coarse)
à In a wide pan heat the water when it boils add sugar and mix well.
à Sugar with dilute and form syrup of thick one strand consistency.
à At this stage lower the flame and add cashew powder and mix well.
à It will boil and paste will leave the pan without sticking at this stage off the flame and stir it in same pan become as dough.
à When it is hand bearable hot take it and kneads it to nice dough (as in for chapatti or puri). Sprinkle few drops of water if dough becomes dry while kneading.
à Now grease a flat plate with ghee or butter and place the dough in it and flatten it using flattener.
à Cut it into desire shape while it is hot.
à Allow it to cool in room temperature and serve it.

Note:
à Can use aluminium foil at top of dough before cutting.
à It can be served as any shape but as in kaju katli it will be diamond shape.

For beginners dough may be harder or shape may not perfect if you do it two or three times it will come perfectly. Now what are you waiting for go and make the sweet and enjoy your evening.

Poori / Puri

Poori is my all time favourite. I use to do it at least once in a week. I will add stepwise picture to this blog later. Now here is the recipe
Puri/Poori
Ingredients:

Wheat flour / Atta
2 Cups
Salt
½ tsp
Oil
1 tsbp and for frying
Water
As reqd

Methods
à Take a large pan and add atta to it.
à Add salt oil and very little water.
à Start kneading dough using clean hand.
à Add very little water once a while (do not add more).
à Beat the dough well enough to get soft puris.
à Keep it aside for 1-2 hours.
à Make small round balls in dough.
à Take a flatter or roti maker and flatten the dough.
àHeat oil in a wok add flatten dough in it .
àWhen it puffes out turn its side.
à Take out from oil and strain oil in paper towel.

Notes
àWe can apply little oil to our hand while making dough.
àTo Avoid sticking in flatter apply oil or dip the ball in plain flour.



Home made garam masala

Garam masala is secret ingredient for many indian vegetarian and non vegetarian recipes. We can make this garam masala with spices which are handy in our kitchen.

Methods

à Dry roast all the ingredients in low flame.
à Allow it to cool.
à Grind all ingredients together in a processor to a powder.

à Store in air tight container.

Capsicum Chilli Chicken


This recipe is indo Chinese dish. It will taste as same as restaurant style chilli chicken . We can use any color capsicum in this recipe. I used green on so mine turn out to green (can add food coloring for exact color). Alternately we can dice and add capsicum with this too. fry it with onions.

Methods
à Clean well chicken.
à marinate chicken with capsicum, soya sauce, ginger garlic paste for minimum half an hour.
à Heat oil in a pan add onions and deep fry well.
à Add green chilli and sauté well.
à Add marinated chicken to onion mix well
à Add Masala powder little water mix well
à Close and Cook till chicken tenders
à Open and allow water to reduce
à capsicum chilli chicken is ready to serve
